Which races have the developers named?
The published development list includes Human, Dwarf, Horemount, Raven, Elk and Yah-Ti. It says they bring different strengths and weaknesses, but does not provide a complete release-ready numerical comparison. Keep the date attached to that list and compare it with the options available in the demo or eventual full game.

Can you freely select every trait?
The May 2026 update says race traits have been added and that direct trait selection was not planned at that time, though it could be considered later. Do not interpret a discussion of traits as proof of a menu for choosing each modifier. Read the actual character information before making a build around a particular interaction.
What is special about Ravens?
The same update presents Raven mutations as a source of entertaining unpredictability and explicitly cautions that they may not suit strict min-maxing. Choose that style if discovery is part of the appeal; choose a more understandable available option if you want to evaluate a fixed party plan. No verified mutation probabilities or exhaustive bonus table are claimed here.
